Un junmai daiginjo hiyaoroshi élaboré à partir de 100% de riz Bizen Omachi, poli à 50% et maturé tout l'été avant une mise en marché automnale. Le processus hiyaoroshi lisse et intègre la profondeur umami inhérente au riz Omachi, donnant un sake avec un arôme frais et propre et une finale sèche et vive.
