Le junmai ginjo Kouju de Soukou Shuzo est brassé à partir de riz Hinohikari poli à 55 %, sans filtration, dans la seule brasserie de sake encore en activité à Oita. Les dégustateurs décrivent des arômes de riz, de pomme, d'acide lactique et une touche de sucre glace, avec un palais léger et mi-sucré savoureux soutenu par une acidité fine et une finale nette et légèrement amère.
