Le Miyama Nishiki à 70 % de polissage constitue la base de ce junmai, brassé avec une rare levure Kyokai d'avant-guerre par la méthode kimoto dans une cave de Nagano qui brasse le sake uniquement en hiver. Le polissage moins élevé préserve davantage de caractère du grain, en complément de l'acidité ferme que génère la fermentation kimoto.
