Poli à 70 % et lancé en automne comme hiyaoroshi, ce junmai genshu de Fushimi repose tout l'été après une seule pasteurisation avant d'être mis en bouteille non dilué à environ 17 % d'alcool. La longue période de maturation arrondit et concentre les saveurs, produisant un sake d'une umami profonde et d'une structure affirmée. Élaboré avec l'eau de source Shiragiku douce de Fushimi, il exprime la richesse veloutée qui accompagne le vieillissement en genshu.
