Le Yamada Nishiki poli à 35 %, un niveau de raffinement qui élimine plus des deux tiers de chaque grain, constitue le fondement de ce junmai daiginjo de la brasserie de Fushimi fondée en 1677. Ce polissage intensif produit un sake d'une umami riche et expansive associée à une finale tranchante et nette, lui ayant valu la reconnaissance platine au Milano Sake Challenge 2019 ainsi que l'or au London Sake Challenge et au Kura Master. L'eau de source Shiragiku douce de Fushimi contribue au caractère lisse et arrondi qui distingue le style maison Shinsei.
