De la brasserie Tominaga Shuzo dans la préfecture de Shiga, ce honjozo s'inscrit dans la tradition brassicole de la région du lac le plus enclavé du Japon, où l'eau pure du bassin versant du lac Biwa soutient depuis longtemps la production de sake. Un modeste ajout d'alcool distillé confère à ce grade sa légèreté caractéristique et son élévation aromatique.
