Sakaya Hachibei Yamahai Junmai Murokanamagenshu Omachi utilise l'Omachi, le riz à sake le plus ancien du Japon, dans un junmai cru non filtré à fermentation yamahai de Motosaka Shuzo à Odai, dans la préfecture de Mie. La combinaison de l'umami riche et terreux de l'Omachi et de la profondeur lactique de la méthode yamahai produit un sake cru aux couches intenses, façonné par le terroir montagneux de Mie.
