Elabore a partir d'un assemblage de Yamada Nishiki et de Miyama Nishiki polis a 60 %, ce tokubetsu junmai nama-chozoshu est conserve au froid apres une pasteurisation unique, ce qui preserve sa vivacite et sa fraicheur. Les degustateurs relevent le caractere sec mais charnu propre a l'etiquette Otakijo, avec un umami net et legerement croquant.
