Au niveau junmai, le riz Kinmon Nishiki exprime sa richesse et sa profondeur caractéristiques sans polissage au niveau ginjo, produisant un sake plus généreux, axé sur l'umami, qui met en valeur le caractère inhérent du grain régional aux côtés de l'eau pure du district de Suwa.
