Le riz de Chiba poli à 60 % est pressé sans filtration et mis en bouteille non dilué sous forme de namagenshu, préservant le corps frais et concentré de ce junmai ginjo de la côte de Kujukuri. La fermentation est conduite avec de la musique diffusée dans le moromi, une approche distinctive de cette petite brasserie de Chiba fondée en 1893, donnant un sake savoureux à la texture vive et croquante.
