Tokubetsu honjozo genshu non dilué moulu à 60 % à partir du riz Hida Minori, fermenté jusqu'à une extrême sécheresse avec une valeur de compteur de sake de +15 et un ABV de 20 %. Le profil ultra-sec présente une acidité nette et vive aux côtés de l'umami concentré du sake non dilué, idéalement servi froid ou sur glace.
