Junmai Daiginjo élaboré avec du Yamada Nishiki poli à 40% chez Yukitsubaki Shuzo à Kamo, Niigata, brasserie exclusivement junmai depuis 2011. Le sake est une expression muroka genshu (non filtrée au charbon et non diluée) avec une seule pasteurisation pour minimiser l'impact de la chaleur, offrant une douceur veloutée, un parfum fruité et une finale propre et élégante.
