Kimpai Namazake est un sake non pasteurisé de la Kimpaishuzou à Hyogo, proposé sous cette forme vivante et non chauffée pour mettre en valeur la fraîcheur du vin de riz nouvellement fermenté. Sans pasteurisation, le namazake retient davantage de composés aromatiques volatils et une acidité vibrante qui le distinguent du sake standard stable en rayon. La riche infrastructure brassicole de Hyogo soutient la gestion minutieuse de la chaîne du froid que le namazake requiert pour maintenir son caractère délicat.
