Le Bodaimoto Junmai de Kikutsukasa Shuzo utilise la méthode bodaimoto, une ancienne technique de levain originaire du temple Bodaisan Shoryakuji à Nara, relancée par les brasseurs de Kyoto pour sa richesse lactique distinctive. Le sake qui en résulte développe un caractère corsé, légèrement acide, avec un umami profond et une complexité enracinée dans l'une des plus anciennes traditions de fermentation du Japon.
