Yamatsuru Junmai Ginjo est brassé par Nakamotoshuzouten à Nara avec du riz poli au standard ginjo, produisant un sake qui équilibre les arômes fruités ginjo avec le corps plus plein d'un junmai. La fermentation sans alcool ajouté permet à la douceur naturelle du riz et à l'umami de transparaître aux côtés de notes florales de tête. L'environnement brassicole ancestral de Nara confère à ce sake un sens de caractère régional et de profondeur.
