Junmai Genshu Hiraizumi est un sake de riz pur et non dilué de l'usine Tamanoharu d'Iwate Meijyo dans la préfecture d'Iwate, nommé d'après la ville historiquement significative de Hiraizumi. En tant que genshu, aucune eau n'est ajoutée après la fermentation, ce sake conserve donc sa pleine teneur naturelle en alcool, généralement entre 17 et 20 pour cent. La désignation junmai confirme l'absence d'alcool de brassage ajouté, donnant une expression riche et concentrée du riz et de l'eau d'Iwate.
