Horaitsuru Junmai Ginjoshu est le junmai ginjo emblematique de Harahonten, une brasserie fondee vers 1805 a Hiroshima qui pratique un brassage annuel en petites cuvees sous la direction d'un seul proprietaire-brasseur. Brasse avec du riz Hattannishiki a un taux de polissage de 60 % et la levure ginjo d'Hiroshima, il presente un parfum leger et raffine avec un umami profond et une finale nette faconnee par l'eau douce reputee de la region. La tradition de brassage a l'eau douce d'Hiroshima est associee a ce style de sake subtil et lisse.
