Horaitsuru Junmai Ginjo Teshibori est presse a la main par Harahonten a Hiroshima, ou le toji-proprietaire presse doucement les sacs de sake a la main pour extraire la meilleure partie du mout fermente. Avec du riz Hattannishiki poli a 60 % et la levure ginjo d'Hiroshima associee a l'eau douce de la region, il developpe une saveur delicate et structuree avec un parfum retenu et une finale propre et lisse. Cette methode de pressage artisanal represente le sommet de la philosophie de production manuelle de la brasserie.
