Bokusui Kimotojunmaisyu est un junmai brassé par la méthode kimoto avec du Miyama Nishiki poli à 65% de la Takeshige Honke Shuzo à Nagano. La fermentation kimoto construit une base robuste et naturellement acide; la brasserie vieillit le sake pendant au moins un an avant la mise en marché, développant un sake riche en saveurs et réconfortant, bien adapté au service chaud. Cette expression a remporté un prix or au Concours national des sakes chauds 2019.
