La producción totalmente artesanal de Hamashima Shuzo en Bungo-Ono, Oita, saca a relucir la riqueza característica del Omachi manteniendo la elegancia propia de un junmai daiginjo. El propio programa de cultivo de arroz de la cervecería, que abarca 13 hectáreas, refleja su sensibilidad ante la forma en que la variedad de arroz moldea la expresión final.
