La designación tokubetsu señala un escalón por encima del nivel estándar junmai, logrado mediante un pulido más riguroso o un enfoque de elaboración específico que el propietario de quinta generación supervisa directamente. El arroz cultivado en la propia finca y el agua limpia de las montañas de Bungo otorgan al sake un carácter de umami arraigado y satisfactorio, apto para el maridaje con alimentos.
