La región de Tojo en Hyogo puede dividirse aproximadamente de sur a norte en tres zonas: Shimo-Tojo, Naka-Tojo y Kami-Tojo. Entre estas, Kami-Tojo es una zona especialmente adecuada para el cultivo de Yamada Nishiki y ha sido utilizada desde los orígenes. Este sake ultra-premium se elabora exclusivamente con arroz Yamada Nishiki especial de la zona de Kami-Tojo.
