NamahaiJunmai Hatsugasumi es un sake puro de arroz de Kubohonkeshuzo en Nara, no pasteurizado en el embotellado pero pasteurizado una vez durante la fase de almacenamiento, un proceso conocido como namahai. Este enfoque de pasteurización parcial preserva parte del carácter fresco y vivaz del sake no pasteurizado, proporcionando a la vez mayor estabilidad que un namazake completamente sin pasteurizar. El resultado es un junmai de Nara que equilibra la vivacidad inmediata con la fiabilidad esperada de un sake distribuido comercialmente.
