Mikotsuru Kinmonnishiki Junmaishu 2014 es un junmai de Suwa Mikotsuru Shuzojo en Shimosuwa, Nagano, elaborado con Kinmon Nishiki, un arroz sake cultivado en las tierras altas de los Alpes japoneses. La cervecería aplica un control preciso de la temperatura durante la fermentación, buscando calidad reproducible mediante el rigor científico más que por intuición sola. Este añada 2014 refleja la tradición regional de Nagano de un sake suave y limpio respaldado por agua pura de deshielo de montaña.
