Mikotsuru Sakemirai Junmai Ginjo se elabora en la Suwa Mikotsuru Shuzojo de Shimosuwa, Nagano, a partir del Sakemirai, una variedad de arroz para sake desarrollada en la prefectura de Nagano y lanzada hacia 2015 para adaptarse al fresco clima alpino. Un pulido ginjo de al menos el 60% y la fermentación de la destilería con control estricto de temperatura producen un perfil limpio y aromático. Los fríos inviernos de Nagano y su suave agua de montaña contribuyen al carácter delicado y accesible de esta expresión.
