El arroz Gohyakumangoku pulido al 50 %, alcanzando efectivamente el estándar junmai daiginjo, otorga a este junmai ginjo Ichiisenshin un carácter limpio y ligero con una frescura similar a la manzana y una acidez contenida. El Gohyakumangoku cultivado en Fukui aporta una estructura crujiente y clara típica de la variedad, rematada con el agua suave del río Asuwa usada en Mourishuzo.
