Este daiginjo se elabora con arroz Yamada Nishiki cuidadosamente seleccionado de la prefectura de Toyama, muy pulido y fermentado a baja temperatura durante un período prolongado con la levadura Ogawa. Seco y delicado, expresa el sutil aroma ginjo de la levadura Ogawa y la suavidad del Yamada Nishiki. El aroma está deliberadamente contenido para no perturbar los platos.
