Bodaimoto Junmai de Kikutsukasa Shuzo utiliza el método bodaimoto, una antigua técnica de iniciador que tiene su origen en el templo Bodaisan Shoryakuji en Nara, recuperada por los elaboradores de Kioto por su distintiva riqueza láctica. El sake resultante desarrolla un carácter de cuerpo pleno y ligeramente ácido, con un umami profundo y una complejidad arraigada en una de las tradiciones de fermentación más antiguas de Japón.
