Oma Yamanokamikobojikomi Junmaishu Hiire combina el método tradicional de producción Yamanokamikoji con un paso de pasteurización que redondea y estabiliza el sake para un mayor potencial de envejecimiento. Elaborado por Kikutsukasajouzou en Nara, este junmai se nutre del antiguo linaje cervecero de la prefectura y de sus prácticas artesanales de elaboración de koji. El tratamiento hiire otorga una textura más suave y melosa, conservando al mismo tiempo la profundidad que aporta el proceso koji especializado.
