Junmai Ginjo Namachozoshu Ginnama de Hakuran Shuzo en Hiroshima se conserva sin pasteurizar (nama) durante todo el periodo de maduración y se pasteuriza una sola vez en el momento del embotellado, un método conocido como namacho. Este proceso preserva aromas vivos y frescos directamente del depósito, proporcionando al mismo tiempo mayor estabilidad en estante que el sake completamente sin pasteurizar. La elaboración de grado ginjo aporta notas florales y afrutadas características de la fermentación con agua blanda de Hiroshima.
