Hatsugasumi Junmai Ginjo es un sake puro de arroz estilo ginjo de Kubohonkeshuzo en la prefectura de Nara, elaborado con arroz pulido al 60 % o menos para revelar delicados aromas afrutados y florales. El proceso de elaboración ginjo emplea una fermentación lenta y fría con cepas de levadura especialmente cultivadas que favorecen el desarrollo de ésteres. La antigua cultura cervecera de Nara moldea el equilibrio entre la elegancia aromática y la sustancia impulsada por el arroz, característica de la región.
