Daiginjo pulido al 40% a partir de Yamada Nishiki, elaborado por Iinuma Honke en Shisui, Chiba, durante el periodo más frío (daikan) del invierno con casi 40 días de fermentación a baja temperatura. El sake ofrece un aroma ginjo afrutado que recuerda a la manzana y la pera, con una dulzura delicada que se disuelve limpiamente en el paladar.
