El arroz Senbon Nishiki pulido al 40% define este daiginjo del distrito cervecero Saijo de Hiroshima, usando una variedad desarrollada cruzando Yamada Nishiki con un arroz de Hiroshima adaptado localmente. El sake de Senbon Nishiki ganó el oro en el concurso All-Japan New Sake Competition durante nueve años consecutivos hasta 2019.
