Nombrado por el ensayista Itoi Shigesato y elaborado con Yamada Nishiki cultivado en Yoshikawa, pulido a un mínimo del 90% mediante los métodos de agricultura natural Nagata, que producen un arroz bajo en proteínas y rico en almidón. A pesar del pulido casi integral del grano, este sake revela aromas de plátano y vainilla, una dulzura profunda de arroz y un final limpio con acidez firme.
