Junmai daiginjo der Yoshinotomo Shuzo in Toyama, gebraut aus Yamada Nishiki auf 40 % poliert und langsam bei niedriger Temperatur mit Tateyama-Schneeschmelzwasser fermentiert. Die lange Kaltfermentation ergibt ein elegantes Aroma und einen vollen, dennoch fein abgestimmten umami, und der Stil wurde bei internationalen Sake-Wettbewerben ausgezeichnet, darunter der London Namazake Award.
