Hyogo Kita Nishiki und Yamada Nishiki, beide in den eigenen chemiefreien Feldern der Brauerei angebaut, werden für diesen rohen, unverdünnten Honjozo Genshu verwendet. Selbst angebauter Reis und Quellwasser aus einem Brunnen auf dem Gelände der Akashi-Brauerei kombinieren sich mit sorgfältiger Niedertemperaturfermentation, um dem Sake ein dichtes Umami und einen trockenen, entschlossenen Abgang zu verleihen.
