Miyama Nishiki, ein Sake-Reis, der für kaltklima-Brauregionen entwickelt wurde, wird in diesem yamahai junmai verwendet, der frisch und unpasteurisiert (nama) aus Tsuruoka abgefüllt wird. Die yamahai-Produktion baut ihre Gärungsbasis durch natürliche Milchsäurebildung auf und erzeugt so ein reiches und volles Fundament ohne das Paddel-Rühren des traditionellen kimoto.
