Description

Grown without pesticides in paddies where Azolla ferns are used for natural weed control, the rice behind this junmai daiginjo is milled to 50 percent and fermented using the traditional kimoto method. The nose shows soft red flower and tropical fruit aromas, while the palate turns creamy and grassy with a snappy, acidic finish. Brewed in Shiga with water drawn from 120 meters underground, it retains a rounded, delicate structure.
