Seit 1855 nutzt die Brauerei das Grundwasser am südlichen Fuß des Akagi, um sake sorgfältig nach handwerklicher Tradition herzustellen. Beim Auspressen der Maische werden alte 'sake-Säcke' verwendet, deren Beschaffenheit eine langsame Reifung ermöglicht und dem sake seine volle Tiefe und Fülle verleiht.
