Bodaimoto Junmai von Kikutsukasa Shuzo verwendet die Bodaimoto-Methode, eine alte Starter-Technik aus dem Bodaisan-Shoryakuji-Tempel in Nara, die von Kyotoer Brauern wegen ihres unverwechselbaren Milchsäurereichtums wieder aufgegriffen wurde. Das resultierende Sake entwickelt einen vollmundigen, leicht herben Charakter mit tiefem Umami und einer Komplexität, die in einer der ältesten Fermentationstraditionen Japans verwurzelt ist.
