Description
Brewed in Niigata using the traditional yamahai method and bottled undiluted as a genshu, this Junmai Ginjo comes in at a robust nineteen percent alcohol with rice polished to sixty percent. Natural fermentation builds deep layers of umami and vibrant acidity, with rich, savory notes of sweet rice and warm toasted spice. The finish is dry and substantial, standing up well to hearty, grilled fare.
