Nagasaki's brewing tradition draws on the island's maritime history and the clean, soft water of the Kyushu mountains, producing a daiginjo with refined, delicate aromatics. The rice is polished to 50% or below, yielding the hallmark ginjo fragrance and clean, lingering finish of the style.
