
Conceived by Regis Camus, the Champagne cellar master behind Piper-Heidsieck and Charles Heidsieck, Heavensake applies the French art of assemblage, deliberately blending multiple cuvées to achieve a specific aromatic profile, to Japanese sake. Brewed at Konishi Sake Brewery in Itami, Hyogo, this Junmai is bottled at a deliberately low 12% ABV, well below the typical sake norm. Salted caramel and mineral notes open the nose; kumquat citrus brightens the palate, followed by whispers of toasted almond and dark cacao. Creamy and gentle in body, designed to sit comfortably on fine dining tables alongside wine, it bridges two fermentation traditions in a single glass.
