Description

自古以来,酒的熟成——即岁月的滋味,令人心驰神往。葡萄酒与威士忌中早已普及的年份概念,在日本酒领域尚未广泛渗透。怀着「以时间为饮法来享受」的心愿,自2010年起开始致力于熟成酿造。为寻求能够经受长期熟成的酒款,同时作为新的挑战,选择了山废仕込。自2013年起不再添加培育酵母,改用天然酵母。用「那一年」的水、米、酵母,怀着对「那一年」的思念酿造而成。若能品味每个年份、各有不同的风情,将是我们莫大的欣慰。商品名「琥刻」,承载着这片湖畔土地与人们所酿之酒,经岁月雕刻而愈加深沉,如琥珀般……
