Echigo Yuzawa was the stage of Yasunari Kawabata's "Snow Country".
The snow that falls in winter is slowly solved in the spring and is absorbed underground over a long period of time. Soft water, purifying impurities during a long journey, is the best natural blessing for sake brewing.
