Shirataki Sake Brewery was founded in 1855 in Yuzawa, a mountain town in Niigata's snow country where a highway linking Tokyo to the Japan Sea coast passes through the alps. Jozen Mizuno Gotoshi debuted in 1990 with a sake style so light and smooth it recalled fresh water — a quality captured in the brand name, which paraphrases the Taoist saying the highest good is like water. The brand now ranges from junmai ginjo to junmai daiginjo and seasonal sparkling expressions, all sharing the delicate, soft mouthfeel shaped by Yuzawa's snowmelt water.
