Tsukimizake no Jozen Mizunogotoshi is a seasonal junmai daiginjo polished to 50%, released in autumn in a distinctive moon-shaped bottle by Shirataki Sake Brewery in Yuzawa, Niigata. It develops an understated, elegant ginjo fragrance that opens on the palate rather than on the nose, with clean umami and a dry finish.
