Polished to 50% and bottled as a genshu, this junmai daiginjo from Shirataki Sake Brewery retains the full concentration of the press, pairing elevated alcohol with the elegant, refined character typical of high-grade Niigata sake. Snowmelt water from Yuzawa provides the soft, clean base for which the Jozen Mizunogotoshi line is known.
