Toyonome
Toyonome is produced by Takagi Shuzo, a brewery established in 1884 in Akaoka, Kochi Prefecture, a town that flourished as a merchant hub through the Edo and Meiji eras. The fifth-generation brewer trained for over a decade under the last Tosa Toji master before taking the helm in 2007, blending inherited craft with data-driven techniques developed alongside Kochi's Industrial Technology Center. The brand is closely tied to local identity, with its everyday expression poured at the renowned Dorome Festival, and its lineup built around locally grown rice and Kochi-native yeast strains.
