Shinryo
Shinryo is made by Henmi Shuzo, founded in 1872 and the smallest of the five sake breweries on Sado Island, Niigata Prefecture. Unlike most Niigata breweries that use soft water, Henmi draws from an on-site well influenced by underground shell deposits, producing medium-hard water that gives Shinryo an unusually textured, natural character; the brewery takes pride in presenting sake as close as possible to its state at the end of fermentation.
